Lemon Pickle

Ingredients to make Lemon Pickle

  • Fresh, large, juicy lemons - 6 cups of lemon pieces
  • Salt - 3/4 Cup
  • Red chili powder - 4tbsp or according to your spice threshold
  • Roasted mustard powder - 2 tsp
  • Roasted fenugreek seeds - 1 1/2 tsp
  • Hing - 1tsp
  • Mustard seeds - 2 tsp for seasoning
  • Gingily oil - 3/4 cup
  • Turmeric powder - 1 tbsp

How to make Lemon Pickle

  1. Wash the lemons and dry nicely using a cotton cloth. Cut into small pieces and fill these in clean jars.
  2. Add salt and turmeric powder and mix well. You can keep this mixture for a week and proceed with seasoning or can season it the same day.
  3. Take a pan with hot gingily oil, add mustard seeds, hing and switch off the stove. Once it's warm add turmeric powder, red chili powder, mustard and fenugreek seeds powders. Mix.
  4. Pour this on the lemon pieces. Using a wooden spatula mix nicely. You can start eating it after a week.
My Tip: Adding hing and roasted fenugreek seeds powder is the secret to the deliciousness of this pickle.
