ABOUT Stuffed Baigan / Brinjal RECIPE

We are used to making brinjal /baigan stuffed ,baghare baigan etc. but this ones with a difference .Stuffed with green chatni, seasoning in mashed potatoes. We all generally keep ready green chutney for other purposes,use the same. This awesome stuffing will give great taste too

Ingredients Serving: 3

  1. 1 - Brinjal, medium size round one
  2. 1 - Potato, boiled, mashed
  3. 1 tbs - Green chutney
  4. 1 tsp - Zeera Dhaniya powder
  5. Salt to taste
  6. 1 tsp - Red chilli powder
  7. 1/2 tsp - Mango powder
  8. White onion to garnish
  9. Oil to pan fry

Instructions

  1. Wash brinjals, pat dry and make long slits in them from the base keeping the stem side intact.
  2. Add seasoning to green chutney and mix in the potato. Stuff it in the brinjal slits.
  3. Once done, remove in a serving plate and have with paratha or Phulka.
