ABOUT Saffron Caramel Pilaf RECIPE

The gentle Pilaf with a subtle hint of saffron, bettered with pineapple , crowned with red cherries and bleached with caramel. There cannot be a better recipe to pamper yourself.

Ingredients Serving: 4

  1. 1 cup - Basmati Rice
  2. 1 Cup - Milk
  3. 1 Cup - Water
  4. 2 tsp - Ghee
  5. 2 - Green cardamom
  6. 2 - Cloves
  7. 7 to 8 - Dried red cherries
  8. 1 tbsp - Cashew nuts
  9. 1 tbsp - Raisins
  10. Handful of green peas
  11. 1 Cup - Pineapple, chopped
  12. Pinch of salt
  13. 1 tsp - Saffron
  14. 2 to 3 tbsp- Brown sugar based on the sweetness you want

Instructions

  1. Soak Basmati Rice in water for 30 minutes.
  2. Heat 2 tsp ghee in a non-stick skillet. Add cardamom and cloves. Add Basamti Rice and fry the rice for 2 to 3 minutes. Add green peas, cherries, raisins and fry again for couple of minutes. Turn off the gas.
  3. Heat 1 cup of milk in a saucepan. Add saffron to it and let the colour dissolve in milk. Pour it over the rice.
  4. In a separate pan, add pineapple and brown sugar and cook till sugar caramelizes and coats the pineapple nicely. Add this mixture to rice. Add 1 cup of milk and pinch of salt.
  5. Cover and cook on lowest flame till rice is perfectly cooked. This will take about 12 to 15 minutes.
