Vegetable Briyani

Ingredients to make Vegetable Briyani

  • Basmati rice 2 1/2 cup soaked in water
  • water 4 1/2 cup
  • tej patta 1
  • 2 laung
  • elaichi/cardamom
  • cinnamon small 2 each
  • onion 5 big cut finely sliced
  • green chillies 3 big slit
  • ginger garlic paste 1 1/2 tbsp
  • tomatoes 3 big finely cut
  • coriander 1 tsp
  • haldi 1 tsp
  • jeera 1 tsp
  • Potatoes 2 small (cut into cubes)
  • Green beans 4 to 5 (cut 1 inch long)
  • Carrot 1 big round & sliced
  • Flat beans (looks like kidney beans) 4 to 5
  • Cauliflower florets 4
  • Pudina leaves for garnishing
  • Coriander leaves for garnishing
  • Fried onions for garnishing
  • Curd fresh 3 tbsp
  • Briyani essence 2 to 3 drops

How to make Vegetable Briyani

  1. First of all heat oil in a pan and add whole garam Masala and fry till it splutters.
  2. Next add onions and fry till light brown
  3. Then add green chillies and fry
  4. Add ginger garlic paste and fry till the raw smell of paste goes away.
  5. Then add tomatoes and keep sautéing and when the oil floats on top add all spice powders.
  6. Add all veggies and cook and let all masalas mix well with veggies
  7. Then add curd and mix well
  8. Add pudina and coriander leaves
  9. Add water and add essence when it boils, add rice and stir well and close the lid when it gives 4 whistles, close the flame.
  10. Tadaa! your veg Briyani is ready. Garnish with fried onions and serve with curd cucumber onion raita.
My Tip: I always add fresh homemade ginger garlic separate paste this gives a nice aroma and even the essence.
