Chicken Mushroom Muffin

Ingredients to make Chicken Mushroom Muffin

  • Sunflower oil - 1/4 cup
  • Self raising flour - 4 tbsp
  • Chopped onion - 1 medium
  • Spring onions - 2 chopped
  • Green chilies - 5
  • Chopped garlic - 5 cloves
  • Eggs - 2
  • Butter - 2 tbsp
  • Mushroom - 15 diced
  • Chicken, boneless, chopped- 5 pieces
  • Baking powder - 2tsp
  • Lemon juice - 1 tsp
  • Sour curd -1/2 cup
  • Salt - as required
  • Pepper - as required

How to make Chicken Mushroom Muffin

  1. Heat oil in a pan. Fry the onions and green chilies, e chopped garlic, chopped mushroom and chicken. Stir fry.
  2. Add the spring onions, salt and pepper. Cook on a low flame. After around 5min remove and set it aside.
  3. In a separate bowl, add the eggs, curd, butter, lemon juice and a little oil. Add the self raising flour to the above mixture. Stir well. Add the chicken, mushroom mix into this and stir.
  4. Fill each muffin cups with this mixture. Preheat the oven and bake for 20 min at 180 ° C. Once done relish it with tea or coffee.
