ABOUT Pulihora / Puliyogare Powder RECIPE

Pulihora is traditional south Indian recipe which is very popular. It can be prepared very easily using pulihora powder. We can make the powder in large quantity beforehand and store in airtight container. Later you can prepare this rice dish instantly by mixing the powder with rice.

Ingredients Serving: 8

  1. 1/4 Cup - Split Black gram (urad dal)
  2. 1/4 Cup - Chana dal
  3. 1/4 Cup - Coriander seeds
  4. 1/4 Cup - Sesame seeds
  5. 1 tsp - Cumin seeds
  6. 1 tsp - Mustard seeds
  7. 1 tsp - Sunflower seeds (optional)
  8. Few pepper corns
  9. 8 - Dry red chilies
  10. 1/2 tsp - Fenugreek seeds
  11. Pinch of Asoefetida
  12. Salt as per taste
  13. 1/2 tsp - Turmeric powder
  14. 1 - Large lemon size tamarind and one tiny ball of tamarind
  15. For Tempering : 1/4 to 1/2 Cup Peanuts
  16. 20 - Curry leaves (dried ones)
  17. Mustard and cumin seeds - 1/4 tsp
  18. Any cooking oil

Instructions

  1. Take a wide pan add urad dal and lightly roast. Take it out in a plate and roast chana dal in the same pan till it changes color.
  2. Remove the dals on plate and now add coriander seeds and sesame seeds to same pan and dry roast until you observe color change. Process should be done on medium flame to prevent burning.
  3. Remove coriander and sesame seeds to a plate and add cumin,mustard, fenugreek, sunflower seeds and roast. Add a pinch of asoefetida.
  4. Next step is to dry roast red chilies. Roast tbsp of dry coconut.
  5. Take one large lemon size and one small ball of tamarind and remove the seeds. Place them In the pan and roast for a few minutes.
  6. Cool all roasted ingredients and blend in the blender by adding turmeric and salt to fine powder. You can prepare the powder in 20 minutes.
  7. Next step is to add tempering to this powder. Take little oil in a pan and when is heated add peanuts and roast till you observe color change. Remove peanuts from oil and keep aside
  8. To same pan add cumin, mustard seeds, dried curry leaves (Dry your curry leaves one or 2 days before) and roast until they turn crisp. You can even add 2 dry red chilies. Add this tempering to above prepared powder
  9. Mix everything and store in airtight container. You can prepare pulihora instantly in large quantities by mixing rice with this powder. If you want powder in large quantities just double the ingredients.
  10. For making instant pulihora with powder : Heat oil in pan add pulihora powder. If needed add very little water so that it wont be dry after adding rice. Cook the rice and beforehand, Now add cooked rice and mix. If needed add some salt.
