Tortilla Pizza Cups

Ingredients to make Tortilla Pizza Cups

  • 2 - Tortilla sheets
  • 1/2 Cup - Grated mozzarella cheese
  • 1/2 Cup - Chopped bell pepper (red, yellow & green)
  • 1/4 Cup - Sweet corn
  • 1/2 Cup - Pizza Sauce
  • Salt & Pepper - to taste
  • Oil to grease the muffin pan

How to make Tortilla Pizza Cups

  1. Preheat the oven at 180 degree Celsius. Grease the muffin pan. Set that aside.
  2. Cut circles from the tortilla sheets using a round cookie cutter or any object with a sharp edge. You will get 4 rounds from 1 sheet.
  3. Place the cut rounds in the muffin tray and apply the pizza sauce.
  4. Add the vegetables and the grated mozzarella cheese next. Season with salt and pepper.
  5. Bake them for 7-8 mins or until the cheese melts and the tortilla cups turn a bit crisp from the edges.
  6. Serve them hot with some ketchup.
My Tip: They are best eaten hot, however you can reheat them in the oven and they crisp up well too. Choose non-veg fillings too if you wish.
