ABOUT Mango Pickle (Methi flavor) RECIPE

This is a South Indian flavor mango pickle.

Ingredients Serving: 10

  1. Sour Mangoes - 1 kg
  2. Whole red dried chilies - 50 gm (I used byadgi chilies)
  3. Methi (Fenugreek) seeds - 1 tsp
  4. Mustard seeds - 1 tsp
  5. Sea Salt / Rock salt ( as per taste)
  6. Asafoetida (hing) - 1/2 tsp
  7. Oil - 1/4 cup

Instructions

  1. Cut mangoes into half, remove the seed and chop in medium size pieces.
  2. Fry chilies and methi seeds, cool a bit and grind into a fine powder. Add powder into the mangoes and add salt, mix well.
  3. Heat oil in a pan, add mustard seeds and allow them to splutter, add hing
  4. Pour into the mangoes, mix well and cover.
  5. Keep pickle outside (normal temp) for one or two days.
  6. After 2 days saute well and then transfer into a jar, keep refrigerated.
  7. This pickle can be kept for 6 months or more in the fridge.
