ABOUT Nylon Khaman RECIPE

Khaman is very famous Gujarati snack. Nylon khaman is little different from regular khaman. Soft spongy and little sweet and tangy in taste.

Ingredients Serving: 5

  1. Besan or Gram Flour - 1 Bowl
  2. Water - 1 bowl or as required
  3. Salt as per your taste
  4. Sugar - 2 tbs
  5. Nimbu Ke Phool / Citric Acid - 1/4 tsp
  6. Oil - 1 tbs for greasing plate
  7. ENO - 1 Packet
  8. For Tadka : Oil - 2 tbs
  9. Mustard Seeds - 1 tsp
  10. Sesame Seeds - 1 tsp
  11. Hing - 1/4 tsp
  12. Sugar - 1 tsp
  13. Chopped Chilli - 4 to 5
  14. Chopped Coriander leaves - 2 tbs
  15. Curry Patta - 10 - 12
  16. Red Chili Powder - 1/4 tsp ( to sprinkle)
  17. Buttermilk - 2 Cup
  18. For garnish : Pomegranate Pearls 1 tsp
  19. Green chilli 1 or 2
  20. Tomato Rose Flower - 1
  21. Some fresh coriander leaves

Instructions

  1. In a bowl add salt, sugar, citric acid and water the mix it properly. Add gram flour and make a batter. Make sure batter isn't watery. Make it as like dhokla batter.
  2. Add some water in the dhokla cooker and put it on gas to steam the khaman. Apply a little oil on a large plate and keep aside.
  3. When water starts to boil keep the plate in the cooker. Now add ENO in khaman batter and mix it quickly. Pour the batter in the greased plate.
  4. Put the lid on the dhokla steamer and cook the khaman till it done or 20 minute.
  5. Keep the tadka ready on another side of gas. For that, heat oil in a small seasoning pan. Put rai and when it starts to crackle add green chilli, curry patta and sesame seeds.
  6. Now add butter milk and sugar in it if you need some extra salt you can add in this stage. Remove from gas and let it cool.
  7. Put the tempering on khaman and cut it to your desired shape.
  8. Sprinkle some chili powder and fresh coriander leaves. Let it rest for 10 minutes. After 10 minute mixture of tadka will be soaked by khaman properly.
  9. Now nylon khaman is ready to serve, garnish as per your choice and serve with sev or chatni. I used tomato flower green chilli, coriander leaves and some pomegranate pearls for garnish.
