Khandvi Gujia

Ingredients to make Khandvi Gujia

  • 1/4 Cup - curd
  • 2 tbsp - gram flour
  • 1/4 tsp - asafoetida
  • 1/2 tsp - turmeric powder
  • 1/2 tsp - red chilli powder
  • salt to taste
  • oil for greasing
  • 2 Cups - water
  • For the stuffing - 1/2 tsp - mustard seeds
  • Few curry leaves
  • 1 tsp- Green chilies, chopped
  • 1/4 cup - Fresh coconut, grated
  • 2 tsp - cottage cheese, crumbled
  • 2 tbsp - coriander, chopped
  • salt to taste
  • 1-2 tbsp - oil
  • Cherry tomatoes to garnish

How to make Khandvi Gujia

  1. In a bowl add curd, gram flour, asafoetida, turmeric powder, red chilli powder, and salt. Mix water to make a smooth khandvi batter.
  2. Heat a pan and pour the batter and cook until it thickens. On the back of a plate greased with oil, pour the batter and spread it. Set it aside for cooling.
  3. Heat oil in another pan. Add mustard seeds, curry leaves ,chopped green chilies, grated coconut, crumbled cottage cheese, salt and saute the ingredients well. Reserve some stuffing for topping. Turn off the flame and add chopped coriander.
  4. Cut the khandvi in small circles using a cutter. Fill each khandvi circle with the stuffing and fold over stuffing to make gujia shape.
  5. Press the edges with the back of a fork to seal Khandvi gujia. Garnish with cherry tomatoes and reserved stuffing.

My Tip:

Serve with green chutney, tamarind chutney or tomato ketchup.
