ABOUT Cottage Cheese Stuffed Mushrooms RECIPE

An Italian dish with Indian twist. Mushrooms stuffed with fresh Cottage Cheese in spinach puree, topped with some White sauce, oregano and chilli flakes.

Ingredients Serving: 3

  1. 8-10 - Mushrooms, fresh and if possible same size
  2. 50 grams - Cottage Cheese / Paneer, fresh
  3. 2 tbs - Wakefield white sauce mix
  4. Blanched Spinach - A small bunch
  5. 1 - Medium white onion
  6. 1 tsp - Oregano
  7. Some chilli flakes
  8. Salt to taste
  9. 1 tbs - Butter
  10. Grated Cheese - optional
  11. Some cilantro
  12. Black pepper - as required

Instructions

  1. Wash, clean mushrooms, scoop out stems carefully to make a hollow.
  2. Mash Paneer with some salt, pepper, cilantro and stuff IT in the hollowed mushrooms.
  3. Meanwhile blanch spinach with little salt and make a coarse puree. Pour it in a baking dish.
  4. Heat butter in a pan, saute sliced onion and stuffed Mushrooms for 2-3 minutes, cover and turn off the flame.
  5. Heat a little butter in a separate pan add milk and 2 spoons Wakefield white sauce.Stir well. Sprinkle chilli flakes and some oregano.
  6. Now place the stuffed mushrooms and onions on spinach puree. Pour hot sauce over these and enjoy hot.
  7. Serve with Garlic bread or Phulka naan, roomali roti or paratha
