ABOUT Bafia Gunda (Gumberry Pickle) RECIPE

Gunda (Gum Berry) is known as ‘Bhokar’ in Marathi. Gujarat , saurashtra and parts of Maharashtra. These Gundas are available for a very limited period of 15-20 days or one month in summer and in select cities only. Gunda is a traditional favorite of Gujarati households. The recipe passes from the one generation to the next.is made of cooked Gum berry fruits. Therefore , they have a limited shelf life. The most tedious part of this recipe is deseeding the fruits.

Ingredients Serving: 10

  1. 400 gm - methiya sambhar ( achaar masala / spice mix)
  2. 400 gm - Groundnut oil
  3. 500 gm- Gunda (Gumberry fruits)

Instructions

  1. Pick green and fresh gunda (Gum berry fruits) from the market. dry them with a cloth. Remove the stems and make a cross slit on the top. Cut the edge and remove seeds from the fruits with chopstick.
  2. Once the gum berry is deseeded. Fill up each of the Gum berry with the methia sambhar (Achar masala ,spice mix ) through the slit.
  3. Heat 400 gm oil in a non stick pan and place all stuffed gunda ( gum berry fruits) in it. Increase the oil quantity if needed.
  4. Once the fruits are cooked in oil add remaining methiya sambhar (achaar masala, spice mix to it). Cover with a lid and leave it for 10-12 minutes.
  5. Once the fruits are fully cooked, let them cool naturally. The Bafiya Gunda is ready to eat.
  6. Bottle it. Refrigerate and consume as needed. Remember to refrigerate else the pickle will get spoiled very fast.
