Ingredients to make Badshahi Chicken

  • Chicken- 700 gm (cut into big pieces)
  • Onion- 2 (cut into thin slices)
  • Onion Paste - 3 Medium Size
  • Ginger Paste - 11/2 tbsp
  • Garlic Paste - 11/2 tbsp
  • Curd - 150 gm
  • Cashew Nut - 25 gm (paste)
  • Turmeric Powder- 2 tsp
  • Cumin Powder - 2 tsp
  • Red Chili Powder - 1tsp
  • Kashmiri Red Chili Powder - 1.5 tbsp
  • Green Chili - 4-5
  • Salt - as per taste
  • Sugar- 2 tbsp
  • Special masala (nutmeg half, green cardamom 4-5, black cardamom half, mace half tsp - dry roast all of them then make a smooth powder of it - 1.5 tbsp
  • Whole Garam Masala - 1 tbsp (1 green cardamom, half inch cinnamon stick, 2 cloves)
  • Oil - 5 tbsp
  • Ghee- 2 tbsp
  • Milk - 1/2 Cup (full fat)
  • Rose Water- 1 tsp (optional)

How to make Badshahi Chicken

  1. Wash chicken pieces & make small gashes, it will help to make it tastier.
  2. Heat up a pan, add 5 tbsp of oil to it, allow it to hot. Add chicken pieces & salt, fry them for 5-6 min, do not over fry the pieces, otherwise the pieces will not tenderize. Keep them aside.
  3. In the same oil add Whole garam mashala, wait for the nice aroma. Add onion slices, fry them till it gets golden brown.
  4. Add ginger, garlic,& onion paste one by one, saute them till the raw aroma diminishes. Add turmeric, red chili, & cumin powder and saute.
  5. Now make a smooth mixture of curd, cashew nut paste & kashmiri mirch. Add the mixture to the pan & stir till oil gets fully separated.
  6. Now its time to add the fried chicken pieces,and mix them nicely. Add silt green chili & the special masala to it.
  7. Keep stirring, then add the milk & salt (be carefully add the salt, remember we already fried the chicken with salt), then cover & cook until the chicken gets fully cooked. Add water if needed.
  8. After 15 minutes open the lid & check if it is done then add ghee & rose water to it. Cover & cook for another 5 min and then serve hot.
My Tip: If you want to add fresh cream then add 1 tbsp of cream over it. I didn't use cream.
