ABOUT Quinoa Salad RECIPE

A Complete protein and and a fantastic wheat free option, quinoa is prized for its nutritional value and great taste.

Ingredients Serving: 1

  1. 1 cup Quinoa
  2. 1 small Cucumber peeled and chopped
  3. 2 Tomatoes seeded and chopped
  4. 1/2 Onion chopped
  5. 2 tbsp chopped Parsley leaves
  6. 2 tbsp Olive oil
  7. 2 tsp Lemon juice

Instructions

  1. Cover a deep dish half with water. Bring to a boil and add salt. Add quinoa, cover the water and simmer for 10-12 mins until quinoa is tender.
  2. Drain quinoa and rinse under cold water. Strain until all the water drains. Add cucumber, tomatoes, onions, parsley to quinoa.
  3. drizzle with olive oil and lemon juice.
  4. Mix the ingredients together.
  5. Garnish with coriander leaves. And serve.
