ABOUT Jhatpat Ridge Gourd Sabji ( No Onion Ginger And Garlic) RECIPE

It is made with very little ingredients and is good for loosing weight. It can be made in few minutes. It is also good for diabetic and heart patients.

Ingredients Serving: 3

  1. Ridge gourd - 1kg
  2. Green chilies - 4-5 or as per your taste
  3. Small mustard - 1 teaspoon
  4. Black Cumin - 1/2 teaspoon (optional)
  5. Curry Leaves - 4-5
  6. Chopped Tomato - 1 Big size (optional)
  7. Salt to taste
  8. Coriander Leaves, chopped - 2 tablespoon
  9. Oil- 2 tablespoon

Instructions

  1. Rinse, peel and chop ridge gourd in small square pieces.
  2. Heat oil in a kadhayi to smoking point and add small mustard, black cumin and curry leaves let them crackle.
  3. Now add chopped green chilies and saute. Add chopped tomatoes and fry them until they become soft.
  4. Now add cut ridge gourd pieces and fry them constantly on medium heat until pieces becomes slightly soft.
  5. Add little salt to this and mix properly with the cooking spoon. It will start leaving water so don't cover. Cook on medium high flame.
  6. Stir in between so that it doesn't stick at the bottom and cooks uniformly.
  7. When all the water from the ridge gourd dries up reduce the flame to low, cover and cook for 4-5 more minutes. Open the lid and adjust the salt and chilli .
  8. Stir fry ridge gourd until oil start showing at the sides of the Kadhai. Switch off the flame.
  9. Turn off the flame and garnish with coriander leaves. Serve hot with pigeon pea daal fry and chapati.
