Mango Coconut Jelly

Ingredients to make Mango Coconut Jelly

  • For Mango Layer : Mango flesh for puree - 250 gm
  • Orange juice - 1/2 cup
  • Water - 11/4 cup
  • Agar agar - 2 tsp
  • Sugar - 1/3 cup
  • For Coconut Layer : Water - 2/3 cup
  • Agar agar - 1 tsp
  • Sugar - 4 tbsp
  • Salt - 1/8 tsp
  • Coconut milk - 2/3 cup

How to make Mango Coconut Jelly

  1. In a blender blend mango cubes and orange juice until smooth.
  2. In a small pan add water and agar agar powder and stir to distribute the powder. Bring to full boil stirring constantly, making sure all the agar agar powder has dissolved.
  3. Add sugar and mango puree and whisk until smooth. Remove from heat and taste..add more sugar if needed.
  4. Pour the mango mixture into a square pan. Refrigerate or leave at room temperature until the surface is set.
  5. For the coconut layer : In a pan combine water and agar agar powder and stir to distribute the powder. Bring to a full boil, stirring constantly, making sure the agar agar powder has dissolved.
  6. Add sugar and salt and stir until dissolved. Add coconut milk, stir to mix and remove from heat. Pour this over the set mango layer and let it cool down.
  7. Refrigerate it and serve cold.
