ABOUT Alur Dum RECIPE

Baby or medium sized potatoes cooked in delicious spicy gravy.

Ingredients Serving: 4

  1. Baby or medium sized potatoes (boiled) : 10-12
  2. Cumin seeds : 1 tsp
  3. Dry red chili : 1-2
  4. Ginger paste : 2 tsp
  5. Tomato (roughly chopped) : 1
  6. Yogurt : 2-3 tbsp
  7. Green chilies : 2-3
  8. Turmeric powder : 1/2 tsp
  9. Red chili powder : 1 tsp
  10. Cumin powder : 1 tsp
  11. Coriander powder : 1 tsp
  12. Coriander leaves : 1/4 Cup
  13. Salt and sugar to taste
  14. Oil : 3 tbsp

Instructions

  1. In a kadhai heat oil, fry the boiled potatoes over high heat for 2-3 min, keep aside.
  2. In the same pan add cumin, dry red chilies. Add ginger paste, tomatoes and salt, cook till the tomatoes are done. Add yogurt, mix well.
  3. Add turmeric powder, red chili powder, cumin and coriander powder, chopped green chilies, cook till oil separates. Add the potatoes, salt and sugar. mix well. Add few tablespoons of water, boil for 2-3 min.
  4. Add chopped fresh coriander. serve hot with roti, paratha, luchi.
