Khasta Kachoris are yummy dish served with Watery aloo and a dry sweet pumpkin.Khasta Kachoris can be made with Moong dal or urad dal.

Ingredients Serving: 12

  1. For the Kachori Dough-
  2. 3 cup Maida
  3. 1 1/4 cup oil
  4. 2 tsp salt
  5. 1 cup Water
  6. For the Stuffing
  7. 1 cup urad dal
  8. 1 tbsp fennel seed powder (Saunf)
  9. 1/2 tbsp coriander powder
  10. 1/2 tbsp ginger paste
  11. 1/2 tbsp mango powder
  12. 1/2 tbsp green chili paste
  13. 1/4 tsp garam masala powder
  14. 1/2 tsp red chili powder (opional )
  15. A pinch of hing
  16. Oil to deep fry + 1 tbsp
  17. Salt to taste

Instructions

  1. Add flour and salt in a bowl,mix well. Add oil, mix well and then add water, knead the dough for 5 mins. Wrap with plastic or muslin cloth and leave for 20- 25 mins.
  2. Soak dal for 3-4 hours, drain well. Add dal,spices, green chilli paste and ginger paste in a grinder to make a paste, If needed, add only 1 tbsp water. Mix well. Grind dal mixture and Make a thick paste.
  3. Heat 1 tbsp oil in a pan, add dal paste in a frying pan and roast on medium heat for about 5 mins. Turn off the heat. Let the mixture cool off.
  4. Grease your palm with oil and knead the dough again 2-3 mins, divide into equal parts and roll them into smooth balls. Roll the ball light handed ( as like puris)
  5. Mold the dough into a cup and place 11/4 teaspoon of filling in the center. Pull the edges of the dough to wrap the dal filling. Repeat with the rest.
  6. Set the kachoris on a surface with the seams facing up. Roll the ball light handed . (You can use also your palm to roll it ).
  7. Heat oil in a frying pan on medium heat. Fry the Kachoris on medium gas. After they start to puff, slowly turn them over. Fry until golden-brown on both sides.
  8. Kachoris are ready to serve.
