Ingredients to make Long Beans Thoran With Fresh Coconut

  • Long Beans, cut in 1/2 inch pieces - 3 Cups
  • Potato, cut in 1/2 inch thin slices - 1
  • Onion, chopped - 1
  • Ginger paste - 1/2 tsp
  • Coconut - 1/3 Cup
  • Turmeric powder - 1/4 tsp
  • Salt
  • Green chilli - 2
  • Red Chilli powder - 1/4 tsp
  • Turmeric Powder - 1/4 tsp
  • Curry powder - 1/2 tsp
  • Curry leaves - 10 -12
  • Black Mustard seeds - 1/3 tsp
  • Oil - 1 tbsp

How to make Long Beans Thoran With Fresh Coconut

  1. Wash and cut all the vegetables.
  2. Heat oil in a nonstick pan add mustard seeds, let them splutter. Add curry leaves and saute for 30 seconds. Add onion saute until they are brown.
  3. Add potatoes and fry for 4-5 minutes. Add curry powder, turmeric powder, chilli powder and salt. Saute for 1-2 minutes.
  4. Now add long beans and cover and cook for 10 - 12 mins in low heat. Add green chilies.
  5. Once the beans and potatoes are cooked add coconut and stir until all the water dries up.
  6. Garnish with chopped coriander or fried curry leaves. Serve hot with rice or roti.
