Nurukku Mangaa

Ingredients to make Nurukku Mangaa

  • 1 - Large raw mango
  • Salt to taste
  • 2-3 tbsp - Red chilli powder
  • 1 tsp - Sesame seed oil
  • 1/2 tsp - Mustard seed
  • 1/4 tsp - Fenugreek seeds
  • 1 Pinch - Hing powder
  • 1 sprig - Curry leaves

How to make Nurukku Mangaa

  1. Wash, pat dry, cut the mango and remove the seed. Chop it in thin pieces.
  2. Add this into a mixing bowl and using a clean spoon mix in the salt and chilli powder. Set aside.
  3. In a shallow pan heat the sesame seed oil, add mustard seeds and fenugreek seeds. Set it on medium heat. As mustard splutters add the curry leaves and hing, remove from heat. Add this tadka to the prepared mango.
  4. Mix well and keep covered for an hour. Fill in clean glass bottles. Use as required.
My Tip: If storing for a few days, use a clean sun-dried bottle, keep it in the refrigerator and use a clean dry spoon each time you take out the pickle.
