ABOUT Rajasthani Aamchur Pickle RECIPE

Made of dried mango slices this pickle is lip smacking.

Ingredients Serving: 4

  1. 100 gm - Dried mango sticks / aamchur
  2. 150 gm - Sugar
  3. Salt to taste
  4. 1/2 tsp - Onion seeds
  5. 1tsp - Red chili powder
  6. 25 gm - Cashewnuts
  7. 25 gm - Raisins
  8. 2tsp - Oil
  9. 1/2 tsp - Zeera

Instructions

  1. soak the dry mango slices for 4 hrs then pressure cook for two whistles. Let it cool. Then add sugar and salt to it.
  2. Soak raisins in warm water for 10 minutes.
  3. Heat oil in a deep pan. Add cashew nuts and fry till golden brown. Now add onion seeds, zeera, red chilli powder and mix well.
  4. Now add soaked raisins and stir well. Add the boiled amchur sticks to this and mix gently. Your pickle is ready to eat. Take it off the gas and cool completely before spooning into a clean jar.
