Home made Dabeli masala for Kachchi Dabeli which is a popular street food in Gujrat and Maharashtra.

Ingredients Serving: 8

  1. 1/2 Cup - Coriander seeds
  2. 1/4 Cup - Cumin seeds
  3. 2 tsp - Fennel seeds
  4. 1/2 tsp - Black pepper
  5. 5 - Cloves
  6. 4-5 - Red whole Kashmiri chilies +1 tsp - Red chilli flakes
  7. 4 blade - Mace
  8. 1 - Star anise
  9. 2 - Bay Leaves
  10. 4 - Black and 2 - Green cardamom
  11. 1 inch - Cinnamon stick
  12. 1 - Sesame seeds
  13. 1 1/2 tsp - Desiccated coconut
  14. 1 tsp - Sugar
  15. 1/4 tsp - Citric acid
  16. 1/4 Tsp - Asafoetida
  17. 1 tsp - Raw mango powder
  18. 3/4 tsp - Black salt
  19. 1 tsp - Ginger powder
  20. 2 tsp - Oil
  21. Salt to taste

Instructions

  1. Heat a pan add all whole seeds and garam masala in it and dry roast, except ginger powder, sugar, salt and citric acid. When a nice roasted aroma starts coming switch off the gas and keep aside to cool.
  2. When cool transfer in mixer jar and add all the ingredients which are not roasted, grind everything well.
  3. Add some oil and again grind till nicely powdered.
  4. When done remove from jar. Dabeli masala is ready to be used. Keep in an air tight jar.
