Ingredients to make Aloo chips ( potato chips )

  • 1 kg potatoes
  • Water ( as required to boil the chips )
  • Salt ( as per taste )
  • Oil (for frying )
  • Salt and red chilli powder ( for sprinkling on top )

How to make Aloo chips ( potato chips )

  1. Peel the potatoes and keep in water.
  2. Now change the water and start slicing the potatoes with a slicer.
  3. For making a criss cross design from same slicer, the potato has to be moved at right angles and hence the mesh like design is formed.
  4. Put the potato slices in water to which some salt has been added.
  5. Meanwhile in a bigger pot or open pan, add lots water and salt and bring to rolling boil.
  6. After the water is boiling, add the potato slices to the water and continue boiling it.
  7. Check when the potatoes are done, the potatoes will get little translucent and softer when pressed with hand, roughly 3 -4 mins depending on their thickness.
  8. Drain the chips in a colander or sieve.
  9. Arrange the chips in a tray lined with clean plastic sheet .
  10. Dry the chips in sun for 1 -2 days and keep on changing the sides.
  11. Store the chips after drying in an air tight container .
  12. Deep fry the chips when required and sprinkle some salt and red chilli powder on top, it enhances the taste.
My Tip: Change waters before boiling the chips so that as much starch is removed from them.
