ABOUT Masala Baigan RECIPE

A tangy delicious brinjal preparation I learned from my mother.

Ingredients Serving: 4

  1. 6 - Medium size brinjals
  2. 1/2 Cup - Coconut paste
  3. 11/2 tbsp - Ginger garlic paste
  4. 1 tbsp - Haldi
  5. 11/2 tsp - Chilli powder
  6. Salt as per requirement
  7. OIl for cooking
  8. Few coriander leaves

Instructions

  1. Vertically slit all the bringals.
  2. Heat a cooker, add oil as per your requirement, Put all the brinjals and fry well after adding haldi.
  3. Add coconut paste, fry well, then add ginger garlic paste, chili powder, salt. Mix well and fry properly.
  4. Add one and half cup water. When water start boiling,close the lid.
  5. After one to two whistles remove cooker from the gas. Remove the vegetable in a serving dish and garnish with coriander leaves.
