Vegetable Fried Rice

Ingredients to make Vegetable Fried Rice

  • Rice 2 cups
  • Whole garam masala :
  • Bay leaf 1
  • Cloves 4
  • Cardamom 2
  • Cinnamon stick 1 inch
  • Whole jeera 1/4 tsp
  • Vegetables ( carrot 1 , French beans 8 , beetroot 1 , green peas 1/4 cup )
  • Onion 1 chopped
  • Ginger 1/2 tsp paste
  • Garlic pods 4 minced
  • coriander powder 1 tsp
  • Curry powder 1 tsp
  • Garam masala powder 1 tsp
  • Ghee 1 tsp
  • Oil 2 tsp
  • Kashmiri chilli powder 1 tsp
  • Turmeric powder 1 /2 tsp
  • Cashew nuts 8
  • Raisins 10

How to make Vegetable Fried Rice

  1. You can use left over rice or fresh rice
  2. If using fresh rice then spread them in a big plate
  3. Rice should not be soft or overcooked
  4. In a pan boil 1 1/2 cup of water with salt and a pinch of turmeric powder
  5. Put all the vegetables for 6_7 mins with a cover in medium heat
  6. Strain all the vegetables , don't throw the water , keep aside
  7. In a nonstick pan heat oil and ghee
  8. Add all the ingredients written under whole garam masala
  9. Also add cashew nuts and raisins
  10. Saute for 2_3 mins
  11. Next add chopped onion
  12. Saute until brown
  13. Add ginger and garlic
  14. Saute for a minute
  15. Add dry powders , turmeric , coriander , cumin , chilli
  16. Saute them for a minute
  17. Now add boiled vegetables and capsicum slices, saute for 2_3 mins
  18. Add rice and salt
  19. Combine rice , vegetables and spices well
  20. Now add 3_4 tbsp vegetable stock
  21. It will give a nice colour to the rice
  22. Saute for 1_2 mins
  23. Switch off gas
  24. Add garam masala
  25. Garnish with chopped coriander leaves
  26. Serve hot with raita and papad
