ABOUT Cabbage Cups With Chilli Yogurt Dip RECIPE

Cabbage cups filled with stir fried cottage cheese, veggies like zucchini, corn, etc and served with a chili yogurt dip. Its healthy, easy and a quick side dish.

Ingredients Serving: 4

  1. 1/3 Cup - Small pieces of cottage cheese
  2. 1 - Tomato cut in small cubes
  3. 1/3 Cup - Sweet corn
  4. 1/3 Cup - Zucchini cut in small cubes
  5. 1 tbsp - Lemon juice
  6. 1/2 tsp - Black pepper
  7. Salt to taste
  8. 1 tbsp - Finely chopped coriander leaves
  9. 1 tsp - Olive oil
  10. 5-6 - Cabbage leaves
  11. For chili yogurt dip : 1/2 cup Greek yogurt
  12. 1/2 tsp - Red chilli powder
  13. 1 tbsp - Lemon juice
  14. 1-2 - Garlic cloves, minced
  15. 1 - Red chili finely chopped (remove the seeds)
  16. Salt to taste

Instructions

  1. Take Greek yogurt in a bowl and add minced garlic, finely chopped red chili, chili powder, lemon juice and salt. Mix it well and refrigerate till not in use.
  2. Heat olive oil in a non-stick pan, add tomatoes, zucchini, cottage cheese saute for a minute.
  3. Add salt and black pepper, mix well and switch off the flame.
  4. Blanch frozen sweet corn for 4-5 minutes. In a bowl add stir fried vegetables, sweet corn, finely chopped coriander leaves, lemon juice and mix well.
  5. Take cabbage leaves, add 2-3 tbsp of the mixture. Prepare rest of the cabbage cups in the same way. Serve with chili yogurt dip.
