ABOUT Bengali Aloo Dum RECIPE

Glistening white Luchi and the spicy Aloo Dum has always been the quintessential breakfast ritual in Bengali households. Here is a delicious recipe of this easy and spicy dish.

Ingredients Serving: 5

  1. 1kg - Boiled baby potatoes
  2. 1 tablespoon - Cumin powder
  3. 1 tbsp- Coriander powder
  4. 1 tbsp- Kashmiri Chilli Powder
  5. 1 tsp - Turmeric powder
  6. 2 tbsp- Ginger paste
  7. 1 Cup - Tomato puree
  8. 2 tsp - Green chilli paste
  9. ½ litre - Mustard oil
  10. 2/3 - Bay leaves
  11. 1 tsp - Cumin seeds
  12. Salt and sugar to taste
  13. Handful of freshly chopped coriander
  14. 1 tbsp - Bhaaja Moshla Bhaaja Moshla 1 tablespoon whole coriander + 1 tablespoon cumin + 2/3 dry red chilies to be dry roasted and ground.

Instructions

  1. Deep fry the baby potatoes marinated with turmeric and salt.
  2. In a pan temper whole cumin and bay leaves. Add ginger paste and then tomato puree.Add green chilli paste.Saute well until the moisture disappears and the oil separates. Add the fried potatoes. Add bhaaja moshla.
  3. Adjust salt and sugar. Finish this with freshly chopped coriander.
