Ingredients to make Crispy vegetable semolina fritters

  • 1 cup Semolina or Suji
  • 2 cup water
  • 1 cup grated or finely chopped vegetables ( carrot, onion, cabbage, capsicum, Green peas)
  • 1 tsp ginger chilli paste
  • 1 tsp dry mango powder
  • 1 tbsp oregano
  • 1 tbsp oil for dough
  • 1 tsp black pepper
  • 1/4 tsp cumin seeds
  • 1/4 tsp carom seeds
  • 1/8 tsp turmeric powder
  • 1/4 cup chopped fresh coriander leaves
  • Salt to taste
  • 2 cup oil for deep frying

How to make Crispy vegetable semolina fritters

  1. Add two cup of water in a pan and bring it to a boil.
  2. When the water start boiling reduce the flame to low. Add salt turmeric powder, cumin seeds, carom seeds, dry mango powder, 1 tbsp oil and mix well.
  3. Slowly add semolina or suji little by little keep stirring continuously so that it does not form lumps .
  4. Now add grated or chopped vegetables, oregano, black pepper powder, chopped coriander and mix well .
  5. Keep stirring continuously and cook on low flame until the mixture becomes thick in consistency ,turn off the flame and keep aside for 2 minutes.
  6. When suji mixture cool down grease your hands with oil and knead it well to make a smooth dough, Now divide this mixture into equal portion, take one portion suji mixture and flatten with your palm giving the desire shape of fritters. Keep aside. Repeat the same process with the rest of the dough.
  7. Now heat oil in a frying pan ,when the oil is hot enough gently slide 4 or 5 fritters into hot oil and fry the fritters until they become golden brown and crispy on the both sides.
  8. Keep them on an absorbent paper to drain excess oil .
  9. Semolina fritters is ready to eat, serve hot with tomato sauce, Green chutney, or mayonnaise.
