Baigan Bhaja

Ingredients to make Baigan Bhaja

  • 1- Big black large brinjal
  • 2 tbsp - Rice flour
  • 1/4 tsp Salt + 1/4 tsp haldi+ required amount of water for soaking Brinjal
  • 1 tbsp - red chilli Powder,
  • 1/2 tbsp - salt
  • 1/4 tbsp - haldi powder
  • 1/2 tbsp - coriander Powder
  • 1 - lemon's juice
  • oil for frying

How to make Baigan Bhaja

  1. Cut brinjal in round slices. Soak in haldi, salt and water mixer for two minutes.
  2. Mix all the dry masalas with lemon juice in a mixing bowl and keep aside
  3. Take out the brinjal slices on a tissue paper to remove all the moisture.
  4. Roll the brinjal slices in the dry masala mix. Dust with rice flour.
  5. Heat oil in pan and deep-fry slices of brinjal till they turn crisp.
  6. Serve hot with sauce or as a side dish
