Fenugreek vegetable Pulao

Ingredients to make Fenugreek vegetable Pulao

  • Rice - 1 Cup
  • Water - 2 Cup
  • Fenugreek leaves - 2 Cup
  • Mix chopped vegetable (Cauliflower, Peas, Potatoes, Carrot, Tomato) - 1 Cup
  • Whole spices : Bay leaf - 1
  • Black Cardamom - 1
  • Cloves 3-4
  • Whole black pepper - 3-4
  • Cumin seeds - 1 tsp
  • Cinnamon stick - 1 inch
  • Turmeric powder - 1/4 tsp
  • Coriander powder - 1/2 tsp
  • Red chilli powder - 1/2 tsp
  • Salt to taste
  • Garam masala - 1/4 tsp
  • Oil - 2-3 tbsp

How to make Fenugreek vegetable Pulao

  1. Wash and rinse rice in water very well then soak it in enough water for 20 minutes. After 20 minutes drain the rice and keep aside.
  2. While the rice is soaking, rinse and chop fenugreek leaves and other vegetables.
  3. Heat oil in a pressure cooker and saute whole spices (cardamom,cloves,cumin seeds,whole black pepper,cinnamon).
  4. Now add chopped veggies. Stir and saute for 2 minutes. Then add feenugreek leaves mix and stir well.
  5. Add turmeric powder, coriander powder, salt, red chilli powder, garam.masala and mix well. Add soaked rice.stir and saute for a minute.
  6. Add 2 cups water and mix well. Pressure cook the pulao on medium flame for 2 whistle.
  7. When the pressure settles down on its own remove the lid. Serve hot pulao with curd or vegetable Raita.

My Tip:

You can add vegetables as per you choice.
