Eggless Lemon Curd

Ingredients to make Eggless Lemon Curd

  • 2 tsp - Lemon zest
  • 150 g - Granulated sugar
  • 5 Cups - Lemon Juice
  • 1/2 Cup - Unsalted butter
  • 2 tbsp - Corn flour
  • 2 tbsp - Water
  • 1/2 - Condensed milk

How to make Eggless Lemon Curd

  1. Mix the corn flour in water. Keep it aside for sometime.
  2. Mix the zest with 1 tsp sugar till it starts looking like a paste.
  3. Now, heat this mixture with the rest of the sugar, lemon juice and butter. Keep stirring for 4-5 minutes.
  4. Now add the corn flour mixture and mix for another 3-4 mins. It will start to thicken.
  5. Switch off the gas, take it off the heat. Pour this mix into a different bowl and add the condensed milk.
  6. Let it cool for 15 mins. Put it in the fridge to chill for another one hour.
  7. Put a dollop of this velvety goodness on tarts or cakes or simply eat it as it is
