Eggless Lemon Curd

Ingredients to make Eggless Lemon Curd

  • 2 tsp lemon zest
  • 150 g granulated sugar
  • 5 cups of Lemon Juice
  • 1/2 cup unsalted butter
  • 2 tbsp corn flour
  • 2 tbsp water
  • 1/2 condensed milk

How to make Eggless Lemon Curd

  1. Mix the corn flour in water. Keep it aside for sometime
  2. Mic the zest with 1 tsp sugar till it starts looking like a paste
  3. Now, heat this mixture the rest of the sugar, lemon juice and butter. Keep stirring for 4-5 mins
  4. Now add the corn flour mixture and mic for another 3-4 mins. It will start to thicken
  5. Switch off the gas, take it off the heat. Pour this mix into a different bowl and add the condensed milk.
  6. Let it cool for 15 mins. Put it in the fridge to chill for another 1 hr
  7. Put a dollop of this velvety goodness on Tarts or cakes or simply lick it.
My Tip: Use this lemon curd on Tarts, cakes, pancakes or on pies
