Ingredients Serving: 4

  1. For Mango Rasgulla : 2 to 3 mangoes, pulped
  2. 1/2 litre - Milk
  3. 1 Cup - Sugar
  4. 3 to 4 Cups - Water
  5. 7 to 8 drops - Lemon juice
  6. For mango Rabdi : Full cream milk - 1/2 litre
  7. Mango puree - 1 cup, fresh and thick 
  8. Sugar - 2 tbsps or as per taste
  9. Cardamom powder - 1/2 tsp
  10. Cashews for garnish

Instructions

  1. Make mango pulp and mix nicely with milk. Make sure that there are no lumps.
  2. Now boil this milk. You will see that the milk starts curdling itself. Add lemon juice to speed up this process.
  3. Once the milk is curdled separate the cheese and wash it under running water and hang it in a muslin cloth to drain the excess water.
  4. Now take the cheese and knead it into a soft smooth dough. The kneading must be done until the dough becomes smooth. Prepare small balls from it.
  5. For the syrup - Take sugar 1 cup and water 5 cups  in a pan (you can take even in the ratio 1:4depending upon your sweetness) and wait till the sugar dissolves fully. Once it's done, add the small balls prepared in the sugar syrup and let them boil for about 15 to 20 minutes. Make sure the pan is covered wit a lid.
  6. For Rabdi : Boil milk in a large heavy bottomed wide vessel. Once it comes to a boil, reduce to low heat and allow to simmer.
  7. Continue to do this till the milk is reduced to less than half of the original quantity.
  8. After almost 30 to 45 mins or so, the milk would have reduced considerably to a thick mass. Add sugar and let the sugar dissolve and then continue to simmer the mixture till it reaches a third of the original quantity.Add cardamom powder, and turn off the heat. Allow it to come to room temperature and then add the mango puree. Mix the rabdi and let it chill inside the fridge.
  9. Now place the rasgulla over the Rabdi and serve garnished with some chopped cashews.
