Ingredients to make Mango Sunshine Cake

  • Mango puree – 1 Cup
  • Vegetable oil – 4 tbsp
  • All purpose flour - 1/4 Cup
  • Corn flour – 2 tbsp
  • Baking powder – 1/4 tsp
  • Baking soda – 1/4 tsp
  • Sugar – 1/2 Cup
  • Milk – 1/4 Cup
  • Egg – 1
  • Salt – a pinch

How to make Mango Sunshine Cake

  1. Mix together mango puree and oil.
  2. Mix the flour, salt, baking powder and baking soda.
  3. Beat together sugar and egg. Add this to the mango puree mix.
  4. Mix the corn flour and milk and add to the mango mixture.
  5. Now slowly fold in the flour mix to the above mixture. Let everything get mixed well.
  6. Preheat the oven to 180 degree centigrade.
  7. Line the cupcake molds with oil. Pour in the batter till 3/4 of the cup.
  8. Bake for 10-15 minutes, until a toothpick inserted comes out clean.
  9. Enjoy the cakes when cooled completely.
