Ingredients to make Egg muffins

  • Eggs-3
  • Sunflower oil-2 tbsp
  • Onion -1 finely chopped
  • Mushrooms-8 diced
  • Capsicum-1 finely chopped
  • Spring onions-a bunch- finely chopped
  • 4 cheese slices
  • Oregano-2 tsp
  • Chili flakes-2 tsp
  • salt as per taste
  • All purpose flour-3 tbsp
  • Green chillies-4 chopped
  • Parsley-2 tsp

How to make Egg muffins

  1. Take oil in a pan.Add the onion, capsicum, mushrooms, green chillies and stir fry.
  2. Whisk egg in a bowl.
  3. Add the all purpose flour.
  4. Add the spring onions,salt,cheese and mix well.
  5. Then add the stir fried mix.
  6. Pour the mixture in muffin tins.
  7. Sprinkle parsley, oregano, chilli flakes and salt.
  8. Preheat the microwave.
  9. In convection mode,bake at 180 for 20 min.
  10. Enjoyyyyy the snack
My Tip: Do not overcook.The egg will become hard.
