Egg Muffins

Ingredients to make Egg Muffins

  • eggs - 3
  • Sunflower oil - 2 tbsp
  • onion -1 finely chopped
  • mushrooms - 8 diced
  • capsicum - 1, finely chopped
  • Spring onions, a bunch - finely chopped
  • 4 - Cheese slices
  • Oregano-2 tsp
  • Chili flakes - 2 tsp
  • salt as per taste
  • all purpose flour - 3 tbsp
  • Green chilies - 4 chopped
  • parsley - 2 tsp

How to make Egg Muffins

  1. Take oil in a pan.Add the onion, capsicum, mushrooms, green chilies and stir fry.
  2. Whisk egg in a bowl. Add the all purpose flour. Add the spring onions,salt,cheese and mix well.
  3. Add the stir fried mix and pour the mixture in muffin tins.
  4. Sprinkle parsley, oregano, chilli flakes and salt.
  5. Preheat the microwave. In convection mode,bake at 180 for 20 min.
  6. Serve these delicious muffins with the sauce of your choice.

My Tip:

Do not overcook or the eggs will become hard.
