Butterscotch Cupcakes

Ingredients to make Butterscotch Cupcakes

  • Self raising flour-1 1/2 Cup
  • Eggs - 3
  • Sugar - 1 Cup (powdered)
  • Butter - 100 gm
  • Butterscotch chips - 1 packet
  • Baking powder - 1 tsp
  • Vanilla essence - 1 tbsp

How to make Butterscotch Cupcakes

  1. Take a blender and mix the powdered sugar and eggs. Whisk till the eggs become whitish then add the butter at room temperature. Whisk well.
  2. Add half of the flour mixture and vanilla essence. whisk again. Then add the baking powder and rest of the maida.
  3. Boil the butter scotch chips following the double boiler method. Once cooled,add this to the above mixture. Mix very well.
  4. Pour the mixture in cake mold. Preheat the microwave oven.
  5. Bake the cupcakes at convection mode at 180 degrees for 35 minutes.
  6. Insert a toothpick and If it comes out clean your cupcakes are ready. Cool on a wire rack and serve.

My Tip:

If you are not able to find butterscotch chips, use butterscotch liquid sauce-6 tbsp.
