A delicious dessert from leftover mangoes and rabdi.

Ingredients Serving: 4

  1. 2 Cups - Thick rabdi
  2. 1 Cup - Thick mango pulp from juicy ripe mangoes
  3. Slivers of nuts if you like
  4. 1 Cup - Milk powder
  5. Sugar as required

Instructions

  1. Prepare the thick rabdi by reducing milk. Add a cup of milk powder towards the end when the milk is almost thick.
  2. Rabdi is a simple procedure of reducing thick whole milk, scraping off layers from the side and thickening till almost reduced to 1/3 rd and sweetened with some sugar and poured over fruits or had as it is.
  3. Let the mixture cool well. Blend it along with a cup of ripe mangoes and some sugar.
  4. Remove after 5-6 hours to check for crystal formation, blend once more either by simply whisking with a hand whisk or blend it in a mixie.
  5. Freeze again for 6 hours till well set. Enjoy the chilled delicious Mango rabdi ice cream .
