Authentic Mango Pickle

Ingredients to make Authentic Mango Pickle

  • Raw mangoes - 2 kg
  • Mustard oil - 1/2 litre
  • Mustard seeds - 1 tsp
  • Salt 5..6 tsp
  • Turmeric powder - 2 tsp
  • Red pepper powder - 2 tsp
  • Asafoitida / heeng - 1/2 tsp
  • Onion seeds / kalonji - 1 tsp
  • Methi dana - 2 tsp
  • Saunf - 5-6 tsp

How to make Authentic Mango Pickle

  1. Wash the raw mangoes and pat dry with a clean cotton cloth. Cut them into medium size cubes.
  2. Pour half of the salt on these pieces and put them in a pot. Keep for 4..5 hours and it will release its own fluid.
  3. Squeeze the mango pieces well and keep them in the sunlight on a cloth for 3-4 hours. Keep the water aside.
  4. Now again mix it in its fluid along with all dry ingredients.
  5. Heat the oil and then cool it to room temperature. Pour this cooled oil in the pickle.
  6. Put it in an airtight container. Keep in sunlight for 2 - 3 days.

My Tip:

Always use a dry spoon to handle pickles as moisture can spoil your pickle.
