Roasted Pumpkin Soup

Ingredients to make Roasted Pumpkin Soup

  • Pumpkin - cut into medium blocks, 2 cups
  • Onion - 1/2 cup, chopped
  • Garlic - 5 to 6 pods
  • Butter - 1 tablespoon
  • Salt to taste
  • Milk - 1 cup
  • Black Pepper Powder - 2 teaspoon

How to make Roasted Pumpkin Soup

  1. Melt butter in a pan and add pumpkin cubes, onion and garlic. Roast them well.
  2. Now add water and put them in a pressure cooker. Allow to cook umtil two to three whistles.
  3. After releasing the pressure, strain the stock and keep it aside.
  4. Now make a puree of boiled pumpkin, onion and garlic.
  5. Take the puree in a pan and add the stock, milk and bring it to boil.
  6. Add salt and pepper powder. Serve hot.
My Tip: Instead of roasting the pumpkin on gas stove you can also roast the pumpkin in a preheated oven at 200 degree C for 30 minutes by drizzling little oil on it.
