Mango Cheesecake

Ingredients to make Mango Cheesecake

  • Cottage cheese 1 cup
  • Amul fresh cream 1.5Cup
  • Thick hung curds 1/2 Cup
  • Alphonso mango puree 1 Cup
  • Vanilla essence 1 teaspoon
  • Sugar 1/2 - 3/4 Cup
  • Agar Agar 10 grams
  • Water 3/4 - 1 Cup
  • Marie biscuits 20 Numbers
  • Unsalted butter 4 tablespoon
  • For topping - Mango puree 3/4 Cup, Sugar 3-4 tablespoons, 1/2 lemon juice

How to make Mango Cheesecake

  1. Powder the biscuits finely.
  2. Melt butter and mix it with powdered biscuits, line the base of the cheesecake pan with this butter biscuit mixture.
  3. Chill in the freezer for half an hour.
  4. Chop the Agar Agar in tiny bits and soak it in water for 10 minutes. Cook it until it is completely dissolved.
  5. Whip cottage cheese, curds and powdered sugar in mixer jar till smooth and creamy.
  6. Add cream, essence and mango puree in the mixer jar and blend again. Add dissolved Agar Agar in this (Agar Agar liquid should be hot) and blend well.
  7. Pour on your set biscuit layer and set it in refrigerator until done.
  8. Topping - Cook mango puree, sugar, lime juice on low flame till it is little thick. Cool it and pour it on the set cheesecake
My Tip: For plating, use a round cutter to cut it out like in the picture and use chocolate sauce and mango puree for decoration
