Corn tacos made with oven roasted butternut squash and kale! Easy to make and Healthy!

Ingredients Serving: 2

  1. 4-6 Yellow Corn tortillas (store bought)
  2. Butternut Squash - 1 medium sized
  3. kale - 1 bunch roughly chopped
  4. black beans - 1/2 cup (cooked)
  5. taco or fajita seasoninig - 1tsp
  6. Onion - 1 sliced
  7. green bellpepper - 1 sliced
  8. Garlic - 2 cloves finely chopped
  9. red bellpepper - 1 sliced
  10. Oil - 1tsp
  11. Salt to taste
  12. Mexican cheese or amul cheese - 1/2 cup
  13. taco sauce - 1/2 cup ( store bought)
  14. pumpkin seeds - 1tbsp (optional)

Instructions

  1. Preheat Oven to 200 degree celcius or 400 F . Peel and chop butternut squash and toss some oil and salt. Place it on the baking tray and bake for 20-25 mins until done.
  2. heat non stick pan on medium heat and add oil .
  3. Add chopped garlic and kale. cook on medium heat for 5 mins until kale is cooked. Then add the roasted butternut squash and half of taco seasoning. cook for a min . remove it in a bowl and let it cool.
  4. To make Fajitas - In the same pan add some oil and saute onion and bell peppers on high heat. Add salt and taco seasoning. cook for 3 mins. Turn off the gas and allow it to cool.
  5. Assembly : Warm the tacos on a skillet or microwave. Remove them on serving plate and add onion and bellpeppers. Top it with butternut squash mix and little bit or cheese. Pour some taco sauce and sprinkle pumpkin seeds. Serve Immediately
  6. repeat for other Tacos.
