Ingredients to make Eggless mini mango cup cakes with mango frosting

  • All purpose flour 60 grams
  • Cornflour 1 teaspoon
  • Sugar 2 tablespoons
  • Sweetened condensed milk 1 tablespoon
  • Baking powder 1/6 teaspoon
  • Soda 1/6 teaspoon
  • Puree of peeled Alphonso mango 4 tablespoons
  • Melted butter 2 tablespoons
  • Mixfruit essence 5 drops
  • Lukewarm water 2-3 tablespoons(as required )
  • For Frosting:
  • Non dairy whipped cream 1/2 cup (75 grams)
  • Mango pulp 2 tablespoons
  • Icing sugar 2 tablespoons
  • for decorations :
  • Strawberry Jelly
  • Mint leaves

How to make Eggless mini mango cup cakes with mango frosting

  1. Sieve all purpose flour, cornflour, baking powder and baking soda.
  2. In a deep vessel beat butter, condensed milk and sugar.
  3. Add drops of essence, mango puree and mix well.
  4. add sieved all purpose flour and fold it carefully (do not beat)
  5. add lukewarm water as required and make batter of dropping consistency.
  6. Preheat oven on 200 degree C.
  7. Pour small amount of batter in lined muffin moulds.
  8. Bake it on 200 degree C for 10-12 minutes.
  9. Remove from oven and let them cool completely .
  10. Meanwhile whip cream, icing sugar and mango pulp with electronic mixser.
  11. Fill it in piping bag.
  12. Icing on cup cakes
  13. Decorate with pieces of jelly and mint leaves
