ABOUT JUJEH KEBAB (CHICKEN LEG WITH CRANBERRY PILAF) RECIPE

Now the dish has to be simple .Isn't it.. And why I call it Jujeh Kebab because this is what my favourite restaurant George@Camp serves only on Tuesday and Thursday. Didn't I tell you it was a Monday.. That's why I had to dig into my pantry and took out a piece of nice chicken leg and some dried cranberries and then took the audacity and risk to lay my hands in experimenting something new which I would have never dared to had it been any other day.. Some things are best left with experts !

Ingredients Serving: 2

  1. A nice big piece of chicken - give some nice deep cuts
  2. Some 7 to 8 tomatoes chopped very finely
  3. 2 onions chopped very finely
  4. 1 tbsp tomato ketchup
  5. 1 tsp Ginger garlic paste
  6. Salt to taste
  7. Tandoori masala 1 tbsp
  8. GARAM MASALA 1 TBSP
  9. Lemon juice about 1 tbsp
  10. Oil about 1 tbsp
  11. Red chili powder - according to the heat you can take
  12. Some mint leaves chopped
  13. Some parsely leaves chopped
  14. What You Need for the Rice:
  15. 1 cup basmati rice soaked in water for 10 minutes
  16. 1 tbsp ghee
  17. Some whole spices like cloves, green cardamom, bay leaf and a small cinnamon stick.
  18. Some chopped dry fruits like almonds and pistachio.
  19. Some dried cranberry
  20. Salt to taste
  21. 1 tsp cumin seeds

Instructions

  1. Heat Oil in a pan.
  2. Add ginger garlic paste.
  3. Let it cook, next add some onions and cook till it turns brown.
  4. Next throw in tomatoes, spices, herbs and let it cook till tomatoes are almost cooked and there is no raw smell left in the pan. Nothing tastes bad than a curry in which tomatoes are not cooked properly.
  5. Finally, add the chicken piece, lemon juice, salt to taste and quote it nicely with the tomato gravy.
  6. Add half cup water and let the chicken cook in a low to medium flame.
  7. Uses a pressure cooker to cook rice. Throw everything into the pressure cooker starting with ghee followed by whole spices followed by rice and finally dry fuits, cranberries and salt to taste.
  8. Add 2 cups of water and cook on high till you hear 2 to 3 whistles.
  9. Thats is all you need to cook rice.
  10. Enjoy your meal. For serving, take a small tomato and char it on flame. It taste so tamatoeee..!!!
  11. And the effect is absolutely charismatic without masking any flavours
