ABOUT Tandlachi Ukad RECIPE

Ukad, a traditional Maharashtrian dish is prepared from rice flour and buttermilk. This dish can be prepared in less time with minimal work and from ingredients easily available at home.

Ingredients Serving: 2

  1. Rice flour 1/2 cup
  2. Buttermilk 2 and 1/4 cups
  3. Green chilli 1, chopped
  4. Gnger 1 inch, grated
  5. Curry leaves sprig or 8-10 leaves
  6. Mustard seeds 1/4 teaspoon
  7. Cumin seeds 3/4 teaspoon
  8. Turmeric powder 1/4 teaspoon
  9. Asafoetida 1/4 teaspoon
  10. Ghee for seasoning
  11. Salt to taste
  12. Sugar to taste (optional)
  13. Coriander leaves, finely chopped for garnish

Instructions

  1. Heat ghee in pan and add mustard seeds.
  2. Once they splutter add cumin seeds, turmeric powder, asafoetida and fry for few seconds.
  3. Next add chopped green chilies, curry leaves, grated ginger and saute it,
  4. Now add buttermilk and keep stirring continuously on low-medium flame.
  5. Add salt, sugar as per taste.
  6. Once the buttermilk starts boiling add rice flour 1 tablespoon at a time
  7. Mix it well so that there are no lumps formed
  8. Keep stirring, the mixture, which will start thickening.
  9. Cover and cook for 2-3 minutes on sim flame.
  10. Once the mixture gets cooked and you get the preferred consistency, switch off the flame.
  11. Serve it hot garnished with finely chopped coriander leaves and ghee on top
