ABOUT Aamrus Aloo Matar RECIPE

This is a very unique recipe where in the Aamrus [mango juice] is actually used to make a delicious curry.

Ingredients Serving: 4

  1. Boiled and diced potato – 2 cups
  2. Boiled fresh peas- 1 cup
  3. Ripe mango puree – 1 cup
  4. Onion- 3
  5. Melon seeds – 2 tbsp
  6. Yogurt – 3/4th cup
  7. Fresh cream – 2 tbsp
  8. Saffron strands- few
  9. Milk – 1 tbsp
  10. Turmeric Powder – 1/2 tsp
  11. Red chilli powder- 1 tsp
  12. Garam masala powder- 1/2 tsp
  13. jeera – 1 tsp
  14. Cardamom- 2
  15. Cloves – 2-3
  16. Slit green chillies- 3
  17. Grated ginger- 1/2 tsp
  18. Salt to taste
  19. Oil – 1 tbsp + as much required for shallow frying.
  20. For the spice powder :
  21. Jeera – 1/2 tsp
  22. Pepper- 1/4th tsp
  23. Cardamom- 2
  24. Cloves – 2-3

Instructions

  1. Soak the melon seeds in little water for sometime. Grind to a smooth paste and keep it aside.
  2. Soak the saffron in milk.
  3. Peel, wash, chop and grind the onions to a puree.
  4. Shallow fry ( can deep fry too) the potatoes and keep it aside.
  5. Dry roast the ingredients mentioned for spice powder.
  6. Cool and grind to powder. Keep it aside.
  7. Heat oil in a pan. Add jeera, cloves and cardamom and sauté for few seconds.
  8. Add the grated ginger and slit green chillies and sauté again for few seconds.
  9. Nos add the onion puree. Sauté till turns light brown.
  10. Add the yogurt ( beaten well), melon seeds paste, red chilli powder and turmeric and mix well.
  11. Add 1/2 cup of water, mix again. Let it boil.
  12. Once the oil starts floating on the gravy, reduce the flame.
  13. Add the mango puree, shallow fried potatoes and boiled peas
  14. Add salt to taste, mix well and let it cook for few mins.
  15. Now add the ground spice powder, garam masala, fresh cream and saffron crushed in the milk.
  16. Mix well. Check for seasonings. Let it simmer for few mins.
  17. Garnish with some fresh cream and serve hot with rotis/ parathas:)
