ABOUT Basanti Polao or Sweet Yellow Rice Pilaf RECIPE

Basanti, literally means a shade of yellow, it is the color of spring. The basanti pulao is slightly sweet in taste because of the use of sugar in it and so it goes well with very hot and spicy curries. Choose from chicken kosha or mutton kosha or a vegetarian aloo dum as a side, and you’ll love this pulao.

Ingredients Serving: 2

  1. Gobindo Bhog rice-2cups
  2. Cloves-4/5
  3. Cardamoms-4
  4. Cinnamon stick-1
  5. bay leaf-1
  6. Star annis-1(optional)
  7. Cashew nuts-10/12
  8. Raisin-9/10
  9. Food colour(yellow)-1pinch
  10. Saffron strands -1tblspn
  11. Warm milk -1/2 cup
  12. White oil+ghee-2tblspn each
  13. Salt & sugar-as per taste
  14. Water-3.5 cups(for 2 cups of rice only

Instructions

  1. Soak the rice well in enough water for 1/2 hour.
  2. Then drain the water carefully & spread the wet rice over a flat dish or a paper.
  3. Let it dry for 30mins.
  4. In the meantime soak the saffron strands in the warm milk.
  5. Now,heat oil & ghee together in a big mouthed pan.
  6. Temper it with bay leaf,star anise ,cloves,cardamoms & cinnamon stick and Stir for a while till the aroma comes.
  7. Now pour the water into it.
  8. Pour the rice into the water when it starts boiling.
  9. Add salt,cashew nuts,raisins,food colour & mix them well.
  10. Let the rice boil well for 8-10mins.
  11. Now,add sugar & saffron milk and keep stiring continuously otherwise the lower part of the rice may burn.
  12. Cook for 3-4mins.
  13. Sprinkle 1/2 tspn ghee.
  14. Spread it over a flat dish to avoid greasiness and serve hot.
