ABOUT Angoori petha RECIPE

Angoori petha, a delicacy from Agra, is a very sweet and juicy version of the normal pethas.

Ingredients Serving: 6

  1. Winter melon - 500gm
  2. Sugar - 200gm
  3. Lime stone ( chuna ) - 1tsp
  4. Yellow colour 3 to 4 drops
  5. Kewra essence - 5 to 6 drop
  6. Chopped almonds - 1 tbsp

Instructions

  1. Take the thicker portion of the winter melon.
  2. Cut them into finger like shapes.
  3. Dissolve 1 tsp of lime stone in 500 ml of milk, soak the melon pieces for atleast 8 hours in it.
  4. Before soaking the melon pieces, make sure that the melon pieces are pricked with fork so that it eases the process of softening the melon.
  5. After 8 hours, wash and strain the melon for about 3- 4 times .
  6. Boil the melon to make soft and drain the hot water . Put the strained melon pieces in cold water immediately so that cooking process stops.
  7. Take sugar with half a cup of water and bring upto boil.
  8. Pour boiled petha into boiling sugar syrup and cook for few minutes.
  9. Now add lemon colour and kewra essence .
  10. Continue to cook for 5 minutes or more , till sugar syrup thickens.
  11. Cover it and let it cool down. Garnish with almond slices before serving.
