This a very healthy soup as it's filled with goodness of vitamins, protein, minerals and powerful antioxidant.

Ingredients Serving: 3

  1. Carrots cubed-2cups
  2. Almonds-10 nos
  3. Yellow/white onion-1 big, sliced
  4. One slit green chili
  5. Fresh Young ginger-an inch ,chopped
  6. Salt to taste
  7. Water/veg/chicken broth-2cups
  8. Dried mixed herbs/fresh basilleaves-2/3
  9. Butter-1tbdp
  10. Chopped tomato-1 no
  11. Peppercorns-10
  12. bay leaf-1
  13. Coriander/parsley leaves chopped-1tsp
  14. Bread sticks to serve along the soup
  15. Fresh cream (optional)-2tsp

Instructions

  1. Heat a pan with butter and bay leaf. Add onions and allow to sweat.
  2. Add peppercorns, tomato, herbs, almonds, ginger, salt, chili and water or broth.
  3. Cook covered for fifteen minutes. Cool and blend into a smooth and creamy paste.
  4. Add water and adjust the consistency and boil for two minutes.
  5. Serve hot in a bowl by garnishing with coriander/parsley leaves.
  6. Addition of cream and pepper powder is optional. Serve with bread sticks and enjoy...
