ABOUT Restaurant Style Egg Fried Rice RECIPE

Egg fried is one of those really easy and simple recipes that requires a couple of ingredients and just a few minutes . This recipe is similar to that of veg fried rice. Using star anise,mace and garlic add great flavours to the rice that we often find in restaurant style rice . You can even use just vinegar in place of soy sauce . You can even add chilli or tomato sauce as desired . One very important thing to keep in mind is that the rice should be 'al dente' . The rice should be firm and not mushy . This is the important criteria for any fried rice recipe.

Ingredients Serving: 5

  1. Uncooked rice 3 cups
  2. FOR THE FRIED RICE...
  3. Beans chopped 1 cup
  4. Carrot chopped 1 cup
  5. Capsicum chopped 1 cup
  6. Spring onion chopped 1 cup
  7. 1 tbsp Vinegar
  8. 3 tbsp soy sauce
  9. 5-6 garlic cloves ; chopped
  10. 2 tbsp pepper powder
  11. 5 tbsp oil
  12. 1 star anise (optional)
  13. 2 strands of mace (optional)
  14. Salt to taste
  15. FOR THE EGG SCRAMBLE...
  16. Eggs large 5
  17. Blackpepper powder 1 tsp
  18. Salt 1 tsp
  19. oil 2 tbsp
  20. For Garnishing...
  21. Chopped green part of spring onions 1/2 cup

Instructions

  1. Boil the water with a pinch of salt . Add the rice and cook them till 'al dente' . This is a very important criteria . Too crucial .
  2. After draining , set the rice aside .
  3. Cut all the veggies up and set them aside .
  4. Heat the oil in a pan . Add the star anice , mace and chopped garlic . Let the garlic turn brown in colour on a high flame for 3-4 minutes .
  5. Next add the chopped veggies , whites of spring onions and mix well again . Reduce the flame to low .
  6. After a minute , add in soy sauce , pepper powder and vinegar and mix again . Let it simmer for a minute . And finally set them aside . It's crucial that the veggies maintain their crunch .
  7. FOR THE EGG SCRAMBLE :
  8. Heat up the oil in a pan .
  9. Crack the eggs in a bowl . Whisk them with pepper powder and salt .
  10. Add them to the heated oil in a pan and scramble till thoroughly cooked.
  11. FOR THE EGG FRIED RICE :
  12. Add in the veggies and eggs to the cooked rice .
  13. Mix well and make sure nothing is mushy.
  14. Garnish it with spring onions . Serve hot with any manchurian dish . I served with chicken manchurian . You can even serve with any side of your choice.
