Ingredients to make Kerala style egg roast

  • Boiled eggs - 4
  • Onion (chopped) - 1
  • Tomatoes (chopped) - 2
  • Ginger & garlic paste - 2 tsp (I have used paste but chopped garlic & ginger can be used for more freshness)
  • Turmeric powder - 1/2 tsp
  • Red Chilly powder - 1 tsp
  • Coriander powder - 1 tbsp
  • Garam Masala powder - 1/2 tsp
  • curry leaves - 10-12
  • Green chillies (slit) - 2
  • Refined oil
  • hot water
  • Salt

How to make Kerala style egg roast

  1. Heat a heavy bottomed kadhai with oil.
  2. Once heated add the curry leaves & green chillies followed by the onion.
  3. Once the onions are sautéed toll golden brown, add the ginger garlic paste.
  4. Saute for few minutes and then add the powdered masalas. Add very little water so that they done burn.
  5. Cook for few minutes and then add the tomatoes, required amount of salt.
  6. Cook with a lid on and on a low flame with occasional stirring.
  7. Once the masala is cooked, add hot water for the gravy and bring upto boil.
  8. Then slit the boiled eggs slightly and add them into the masala.
  9. Check for salt and serve.
