Ingredients Serving: 6

  1. 4 and 1/2 cups good quality basmati rice
  2. Salt as per your taste
  3. 1 tbsp Chilli powder
  4. Green chillies 2-3
  5. 1/2 bunch of mint leaves
  6. 1/2 bunch of coriander leaves
  7. 3/4 packet Shan biryani masala
  8. Mixed veggies of your choice
  9. 1 tomato
  10. I took 2 small carrots, 1 capsicum, 3 potatoes,7-8 string beans, hand full of green peas n few cauliflower florets.
  11. 1 cup Yogurt
  12. 1 tbsp ginger n garlic paste
  13. 1 tsp turmeric powder
  14. 1tbsp coriander n cumin powder
  15. 8-10 tbsps of oil
  16. few saffron strands soaked in 2 tbsps milk
  17. 1/2 cup of fried onions
  18. 2-3 bay leaves
  19. 2 tsps jeera( cumin seeds)
  20. 3-4 Green cardamom pods
  21. 2 star anseed
  22. 2 INCH CINNAMON STICK
  23. few pepper corns
  24. 1 spoon coriander seeds
  25. 1 small piece of mace
  26. finally few cashews

Instructions

  1. First soak Rice for 20-30 mins not more than that
  2. chop all the veggies in chunk size so that they don't get mushy
  3. now take big vessel n take 3-4 times more water than Rice and add soaked Rice in it ..
  4. add 2 Green carmom pods, 1 Star anseed, 1 tsp cumin seeds,4 cloves, 8-10 pepper corns,1 inch cinnamon stick, add required Salt , 2 bay leaves n 1 tbsp oil to it n boil the rice.
  5. The Rice should be 70% done then strain the Rice n keep it aside.
  6. now take another heavy bottomed vessel n add oil to it
  7. add ginger garlic paste n saute for a minute
  8. now add 1 spoon cumin seeds n remaining spices n bay leaves to it n sautr for a minute
  9. now add veggies n Fry individually until they r slightly roasted n now add Shan biryani masala n all the dry spices like Salt, chilli powder, coriander powder, cumin powder n Shan masala to it n mix well .. don't add too much salt as Shan biryani masala has salt in it.
  10. now add mint , coriander leaves, fried onions n cashews to itn mix well.
  11. now add yogurt to it n mix well n Cook for few minutes
  12. now add tomato to it n mix it
  13. now add the stained Rice on top of it n garnish it with cashews, mint n coriander leaves n fried onions ..
  14. add safron milk on top n Close the lid tightly so that steam does escape
  15. keep the flame on low n Cook 20-25 mins n your delicious restaurant Style biryani is ready to serve..
